Maple Syrup—Oh Yes, Toronto
The sap of Canada’s maple trees is made into some of the best maple syrup in the world. To turn sap from a sugar maple into syrup, the liquid is collected from a tapped tree, brought to a sugar shack or cabane à sucre, and boiled over an open flame. Sap becomes syrup when it hits seven degrees (Fahrenheit) above the boiling temperature of water (which changes with altitude). The syrup is then strained and cooled.
Maple syrup is graded by color: the lighter the syrup, the higher the grade. You can pick up several varieties of the sweet elixir at Oh Yes, Toronto, located in Eaton Centre, a mall that stretches two full city blocks. The shop carries syrup from some of Ontario’s best-known companies, including Smokey Kettle, Maple Classics, Canadian Pure, Simply Maple and Northern Comfort.
